Indulgent evenings

After a very busy and stressful March, I have resolved to take better care of myself in April. Tonight it got off to an excellent start. After a massage (a rare treat), I decided to do only things that I enjoy for the rest of the night. I had a glass of wine as I made one of my favorite dinners, pasta with sautéed mushrooms and crushed red pepper flakes, watched a chick flick (Fever Pitch), and took a bath. I even ate ice cream while doing the dishes to ease the pain of that chore. It was great -- something to practice more often.

This weekend, one of my talks with my girlfriends involved the issue of doing what makes you happy versus doing what you feel like you should do. It made me think, why not try, whenever possible, do do what you really want? Usually the "shoulds" don't matter as much as we think they do. That was part of the inspiration for tonight.

Amen! I love this post. And even when there are things I don't particularly long to do, there are ways to sandwich them in between things that make me happy. Thanks for the reminder.

First...can you share the recipe for your favorite dinner? I love having a glass of wine while making dinner. And it is now referred to as Mommy's Time Out!

Second...I LOVE to eat DIbbs while cleaning up the kitchen after dinner. They are those little ice cream snacks. Perfect size!

It took me a long time after having my kids to figure out that I needed to do things for myself that I wanted to do. There are a million things I NEED to do. I just booked a trip this morning for later this month that I will be taking by my self. I have been away from my children for ONE day since their birth (and that was to birth the other one) so this is a huge deal! But I NEED to do this for me.

Thanks for asking Connie! This is my recipe - I make it because it is easy, but I'm sure there are tons of things you could add (like garlic or eggs for starters - I like to use whatever is in my fridge) to make it fancier.
- start boiling water for pasta
-dice pancetta and saute in frying pan with olive oil. once it's cooked, add chopped mushrooms (any kind works)
- season pancetta and mushrooms with lots of salt and pepper along with crushed red pepper flakes - more than you think because it will flavor the whole dish
-once pasta is cooked (I prefer thin spaghetti), then put it in the frying pan and mix it all up so pasta is coated in the oil too (I don't use ton of oil but maybe 3 tablespoons or so, to make sure the pasta isn't sticky)
- sprinkle with parmesan-reggano flakes and serve!

and wow, a trip by yourself, that is a big deal - let us know how it goes!

I can't wait to try it! I even just discovered that my local grocery store is carrying pancetta now! This is amazing as I can't find the simplest of ingredients in Ogden.

Oh my goodness....now that I actually purchased my ticket, I'm freaking out a bit that I will be away from my kids. I was at the doctor for two hours this afternoon and became very anxious to be back with them. I may have to be medicated! LOL!
